Lemon Rosemary Chicken Cassoulet

- 1 Whole Chicken
- 1/4 Cup D'Luscious Lemon Olive Oil
- 2 Tbsp Fresh Rosemary Olive Oil
- 3-4 Whole Lemons
- 4-5 Tender Sprigs of Fresh Rosemary (optional)
- Red Potatoes
- Salt & Pepper
Clean chicken and rub with D'Luscious Lemon Olive Oil. Put chicken in a covered roasting pan and squeeze two lemons over chicken. Add 1-2 lemons, quartered, into the cavity of the chicken along with sprigs of fresh rosemary and secure chicken.
Quarter the red potatoes and toss with Fresh Rosemary Olive Oil. Add potatoes around the chicken. Cover and cook two hours at 350 degrees.
